Cooking Up A Storm With PT + Model Lou Barton

I'm all about quick, easy and cheap fixes when it comes to cooking food. I love cooking and I really love being in the kitchen, but let's be honest a lot of us see cooking as a chore or as ‘that thing you have to do’ that’s just a bit time consuming. This doesn't have to be the case. Most of my dishes take about 10 minutes to prepare and cook and if they make your life easier sometimes, why not cook in bulk so you have leftovers for your lunch or dinner the next day?  

Many of us who are big into fitness think that the only way to get lean is through eating chicken, fish, rice and veg everyday.  Food palettes become bland and food becomes a routine rather than something that should be loved and enjoyed.

We need to step away from this way of thinking! By all means have chicken, fish, veg and rice everyday but why not add some flavour and do something to make it less repetitive.

This is where I come into play. I want to show you that healthy food is super easy to make and so cheap if you go to the right places and shop for the right things. Learn to do one shop and make that food last instead of spending all your hard-earned money daily on different foods just to add variety to your diet, you can do that with the same food you have and you won't be wasting what's in your fridge.

Waste is actually one of my pet hates. My dad has taught me never to waste food and I truly live by this everyday.

I love food, I love the taste, the smell, the texture! I just love it all. I love trying new things and experiencing new places. But my god, being a Geordie in London town certainly takes its toll on my bank account, like I'm sure it does with many of you. I love socialising and going out with my friends but everything does cost money. I want to try and help make food and fitness that little bit cheaper and more enjoyable for you. There is no need to spend a fortune on food shopping everyday. I want to help you make food last on a cheap budget and to ensure you're eating super healthy and delicious things. I want to help you use every little bit of food in your fridge and to know that sad little vegetable on the cusp of being binned is going to good use ..... in your belly!


Tomato, chilli & prawn courgetti.




Super quick, healthy and delicious lunch or dinner.

Prawns are a good source of protein, omega 3 and essential fatty acids.


  • Prawns (peeled)
  • 1 whole chilli (green or red)
  • Salt & pepper
  • Cherry tomatoes (big handful)
  • Red bell pepper
  • Fresh parsley
  • 1 courgette


Heat olive oil or coconut oil in a pan, add prawns, finely chopped chilli, parsley, cherry tomatoes and red bell pepper.

Add a touch of salt and pepper and cook all the way through.

Add grated courgette (courgetti) and cook for a couple of minutes until heated all the way through, serve and enjoy :)


Sautéed mushrooms & asparagus on gluten free toast





  • Mushrooms
  • Butter
  • Asparagus
  • Coriander
  • Salt and pepper
  • Chill flakes


  1. Heat a tablespoon of butter in a frying pan, add chopped mushrooms, asparagus and coriander.
  2. Cook all the way through, serve on buttered toast and top with chilli flakes.
